Rustic Tomato Sauce
Makes 1 Cup Tomato Sauce
Ingredients
1-2 punnets cherry tomatoes, halved
1-2 sprigs basil (leaves only)
2 cloves garlic, peeled and sliced
1 Tbsp olive oil
1/2 Tbsp balsamic vinegar
Salt
Pepper
Method
- Preheat oven to 180*C
- Place tomatoes, garlic and basil leaves in a small baking tray
- Drizzle with olive oil and balsamic vinegar. Season with salt and pepper. Toss to coat.
- Bake for 15-20 minutes or until the tomatoes are blistered and soft.
- Remove the garlic from the tray.
- Use a fork to roughly mash the tomatoes into a thick sauce.
