Not quite Rocky Road Bliss Balls
Apart from lamingtons, rock road has to be my greatest sweet weakness. In an attempt to recreate a healthier alternative to kick my rocky road cravings, I’ve developed this simple recipe which is great as a snack of dessert. Feel free to chop and change the ingredients. The addition of nuts would work well, as would a dusting of desiccated coconut to the finished balls.
Ingredients
1/4 C coconut
1/4 C dried strawberries (these are available from The Source Bulk Foods)
1/2 C rice puffs (I used the Freedom Foods brand)
2 Tbsp buckinis (try the Loving Earth brand)
1 Tbsp cacao nibs
1/4 C cacao powder
140g medjool dates, chopped
2 Tbsp peanut butter
1 Tbsp coconut oil
Method
- Place all ingredients in the bowl of a food processor and blitz for 30 seconds, or until ingredients are evenly combined and start to form a ball.
- Roll mixture into golf ball sized balls.
- Refrigerate for 2 hours to allow to set.
